Hydrating Cucumber Mint 'Mojito'

SERVES 2 (makes about 2 cups)

1 medium cucumber (about 8 oz. peeled - or leave unpeeled for a thicker texture with more nutrients)

1 c coconut water

1/4 c fresh mint leaves (packed)

3 limes - juiced

ice cubes optional - or chill in fridge prior to serving.

Add all to a high speed blender and blitz until smooth and frothy. Chill in fridge until ready to serve. For serving, mix well and pour into 2 glasses. Top with mint leaf.
