Coconut Spice Pumpkin Seeds
- 1 1/4 c pumpkin seeds
- 1 T coconut oil
- 1/2 t pumpkin pie spice or cinnamon
- 1 T shredded coconut
- 1 T pure maple
- Oven 300
Scoop seeds out of pumpkin placing in a large bowl as you go. It’s nearly impossible to keep all the pulp out so when all seeds are in the bowl, rinse with water and when seeds rise to the top skim them out + place them in a colander and rinse.
Place coconut oil in iron skillet and melt. Add seeds and stir approx 8-10 min. on med heat.
Remove seeds from heat. Mix with remaining ingredients.
Place pumpkin seeds on baking sheet and roast 20-25 minutes, stirring once, until golden brown. Cool 5 minutes.
